Our values: Local and seasonal,
but as open as possible

Sustainability is a much-used term that is now it is abused for marketing purposes and is often completely taken out of context, "sustainable" to economize means producemore resources to consume than can regrow. We can not do much to oppose this concept because we can never or will never be sustainable. However, we mainly use seasonal products from local suppliers, which we select with the utmost care, exotic fair trade fruits and local meat. Of course you can not always get all the products from local producers at big events, here is our focus in the selection of GMO-free and naturally grown vegetables and free-range eggs. Our meat is sourced from the butchery "Kaufmann", which supplies us mostly with meat from regional origin. Legumes, rice, grain and seasonal vegetables are sourced from the packaging-free market "Novo" in Bolzano.High-quality seasonal products simply taste better
and are mostly healthier, for this reason, we do not "cook it down" but use modern cooking techniques to maintain the highest possible nutritional content, color and taste.

Respect for the producers

Experienced farmers are the foundation of a healthy and balanced diet. Their products combine landscape and nature with consumers. In contrast, factory farming and the global food industry are increasing the distance between consumers and the "goods" produced by this system. Products from intensive animal farming and endangered species are not on our shopping list. Anyone who prepares food, be it commercial or at home, should face up to this responsibility.

Respect for the environment

Waste avoidance and separation, the use of cleaners on a natural basis and, if necessary, compostable disposable crockery, as well as a general careful handling of nature characterize our work. We only use reusable crockery on porcelain or glass and
never plastic dishes, unless it is an explicit request from the client.
